Mediterranean Salad



Mediterranean Salad With Feta Cheese 

20 min | 20 min prep | SERVES 4

4 cups mixed salad greens
1 cup roma tomatoes, chopped
1 cup kalamata olives, coarsely chopped
1 cup avocados, peeled pitted and chopped
3/4 cup feta cheese, crumbled
3/4 cup garbanzo beans, drained and rinsed
1/4 cup red onions, thinly sliced
1/2 cup balsamic vinaigrette

  1. Toss all ingredients except vinaigrette in a large bowl and cover.
  2. Refrigerate until ready to serve.
  3. Add vinaigrette and toss to coat.

    WOW, YUMMY... One guess what I shall enjoy for lunch.... I love the addition of avocado. Do you think the author of this recipe would object to my use of Danish Blue, instead of Feta?

      Ileana, of course you are free to modify my recipe any way you see fit.  I would not sub Bleu for Feta simply because the kalamata olives give the salad enough zing for me and the feta is a nice balancing act.
